Rainbow Lemon Basil Potato Melody Salad | {Fat Free, Medical Medium, Whole 30, Gluten Free, Vegan Lunch Idea} | Denver, Mountain Colorado Photographer

I really struggle to eat salads without fat. Being on the Medical Medium protocols I’ve tried to stay as low fat as possible which means no more oil/vinegar based dressings. So when I realized I could transform an old recipe I created a while ago of this same potato melody into a salad I was SO excited to have a HUGE bowl of salad and ENJOY it completely FAT FREE!! WHOO!! Bonus that its super color and fun looking to eat. I hope you enjoy this yummy easy to make salad that can also be prepped for bulk lunches if you’re on the go! Enjoy friends!
